Fred Harvey Recipes

Most of the Fred Harvey recipes were French-based — that’s why the Harvey eateries were so famous for fabulously-tasting food. Fred Harvey hired many chefs from overseas. They were trained using Auguste Escoffier techniques. The original recipes were written in paragraph form, unlike how we write recipes out today. Below is a picture of a recipe box with over 200 recipes from an original Fred Harvey eatery. Come see it, it’s in the exhibit.

Fred Harvey Standard Recipes—Victor Hugo Inn

Apricot Honey French Toast

Slightly beat 4 eggs and add 1 tsp salt, 1 cup apricot nectar and 2 Tblsp strained honey. Place in shallow pan. Cut 6 slices of day old bread diagonally. Soak bread in mixture until soft. Cook on a hot, well greased griddle or in frying pan. Brown on one side, turn and brown on other side.

To Serve: Arrange on plate in sunburst design, serve with warm honey.

Fred Harvey’s Sugar Cookies

Cream together 4.5 ounces shortening and 4.5 ounces butter. Mix on low speed. Continue to beat and add 1 1/8 lbs granulated sugar. Slowly blend in 2 1/4 ounces whole milk, 4 large eggs and 1 ounce vanilla extract. Mix on low speed and scrape down sides of bowl. Sift together 1 1/2 lbs plus 3 ounces all purpose flour, 1 1/2 tsp baking powder and 3/4 tsp salt. Add to egg and milk mixture. Mix. Form into 1 ounce pieces that are about 1/2 inch thick. Place on cookie sheet 2 inches apart. Bake at 400 degrees until lightly golden. Approximately 10 minutes.
